How are luxury bonbons made?
It is a delicate process to make a luxury bonbon. The first important step is to clean the bonbon molds. Only when the bonbon molds are spotless the luxury bonbons get their beautiful shine. They look like little mirrors in which the environment reflects.
The shell of the luxury handmade bonbons
Once the bonbon molds are clean, the craft begins, which takes a total of 3 days. It starts with the outside. The bonbon molds are first injected with an airbrush with a mixture of cocoa butter and natural dye. After this is done the molds must rest for a while. In this stage the cocoa butter can crystallize.
The next day, the bonbon molds can be molded. Moulding means nothing more than filling the molds with a layer of dark, milk or white chocolate. The shell, the basis of the luxury handmade bonbons is now laid. The shell has to crystallize for at least one day, otherwise there is a risk that the chocolate shell and the filling will blend together.
Luxury bonbon filling
Of course, a luxury handmade bonbon can't exist without a delicious filling. A filling for a luxury bonbon can be very different. One can work with a ganache or with a giadunja. Depending on the recipe for the luxury handmade bonbon.
In our chocolaterie in Tilburg we make 9 unique bonbons. Each luxury handmade bonbon has its own special flavor that matches the special origin of the Grand Cru chocolate. This means that each luxury bonbon also has its own ganache or giadunja. The ganaches and giadunjas are freshly prepared on day 2. Then each luxury bonbon is filled by hand through a piping bag. The filled chocolates also need another day to rest.
Bottom luxury handmade bonbons
On Day 3, the final step of making a bonbon takes place: sealing the luxury handmade bonbons. Without a bottom, the filling would naturally run off, but sealing a bonbon has another important reason. When a bonbon is properly sealed it prevents air from getting in and keeps the filling creamy and storable for three months.

After three days the most exciting moment is there. Are the luxury handmade bonbons in a good condition and do they come out of the molds well? Strict quality control takes place. The outside of the bonbon must be shiny. If it doesn't shine, the luxury handmade boon can't be sold. Fortunately, this happens very rarely. Next step is to taste one bonbon of every single batch to check if the filling has the right taste and texture. Only then all the luxury bonbons will be packed in the luxury bonbon boxes and are ready to send to you!
As you can see, it requires a lot of patience to make a bonbon and therefore they're meant for special occasions.
